Bali grows some of the most unique and sought after coffee beans in the world. Our beans are sourced from farms that grow in volcanic loam soil at high altitudes, giving the beans a rich sweet flavor. Unique to this region, the beans are hand picked and wet-hulled. This means the cherries are picked, put in water to remove any that are not ripe and carefully pulped and fermented overnight then got through a process specific to that area called Giling Basah, which creates the bluish tone of the bean once dried. Balinese producers continue to maintain traditional rural lifestyle organized around Subak Abian, which is a reference to the ecologically sustainable irrigation system developed more than 1,000 years ago by Hindu priests who practice Tri Hita Karana (the three sources of prosperity), a philosophy focused on the harmonization between the environment, humans and God.  These traditions are followed in the coffee cultivation, which means pesticides and synthetic fertilizers are never used. 

We small batch roast these beans to a Medium-Dark Roast highlighting the flavor profile of dark chocolate, molasses and brown sugar. Ships the same day it is roasted!

Region: Kintamani Highlands of Central Bali Indonesia

Process: Hand picked, wet-hulled, two-step sun dried on raised beds 

Farm: Our beans are sourced from organic certified small family-owned farms where producer uses a few acres to cultivate coffee along with citrus trees in volcanic loam soil. They carefully sort their harvested cherries before depulping and fermenting overnight with their own micro-mills. The coffee is then washed and laid out on patios to shed the excess water from the coffee parchment.  Then the coffee takes a detour from the conventional path of processing in other origins, wherein, the coffee parchment is removed while the coffee still has a high moisture content. This Giling Basah process leaves the coffee been exposed while drying and gives the beans their distinct bluish color.
